Raw Hummus Romaine Lettuce Wraps

A very nutritious way to get the necessary energy from plants! These are my yummy Raw Hummus Romaine Lettuce Wraps, with crunchy, low calorie, and juicy flavors in every bite. Romaine lettuce is known to contain healthy sources of vitamin K, A, and beta carotene. Romaine lettuce also offers our body natural fiber, which is helpful for cleaning out the digestive tract. In this recipe, I used my own homemade hummus as a spread, and it’s a nutrient-dense food with the great value of adding a plant-based protein to any dish. Serve this as boats as I did, and get creative with the toppings of your choice.

Healthy Tip: Vitamin A in romaine lettuce is known to protect eye health and may reduce cataracts as people get older. “Also, according to the National Institutes of Health (NIH), beta-carotene may help prevent a condition called macular degeneration (Marengo, 2019) “.

Ingredients:
Romaine lettuce (2-3 bushels is about a serving)
Hummus (spread)
Zucchini (peeled in 1/4 in strips)
Carrots (shredded)
Avocado (I like to buy frozen chunks allow them to thaw out for about 5 min)
A hand full of fresh Cilantro (use as garnish)
Bragg Coconut Aminos (Lightly splashed over the top)
Seasoned with cracked Pepper!

Optional Toppings:
Nuts/Seeds: Pine nuts, Pepitas, Hemp Hearts, or Flax Seeds.
Fruit toppings: Apricot, Mango chunks, Pineapple, or Cranberry.
Veggie toppings: Cucumber, Cabbage, Brussels Sprouts, or Radishes.

Instructions:
1. Wash and pat dry produce. Set aside.
2. Use a serving dish to lay each romaine bushel on its backside down (forms a boat).
3. Next, using a tablespoon evenly spread hummus inside the boat.
4. Place zucchini, carrots, avocado on top of the hummus. Top with cilantro as a garnish.
5. Season lightly with Brag Coconut Aminos and cracked pepper for taste! Voila…!
