Green Goddess Pear Salad
Not only do pears add a sweet and crisp flavor to your salads, but they also offer your body many amazing health benefits. By adding a seasonal pear to my Green Goddess Pear Salad, it enhances the nutritional value of this dish!! In a single pear, they contain vast amounts of micronutrients, macronutrients, and both soluble and insoluble fiber. Also, they are considered a powerhouse food and are packed with vitamin K, folic acid (vitamin B9), provitamin A, copper, and potassium. This dish has everything you need to help sustain a healthy digestive tract, energy production, and cellular function. I included hemp hearts as a topping, to enhance the value of plant-based proteins in this recipe. Hemp hearts also contain anti-inflammatory agents, which may help reduce inflammation in the body, reduce skin issues/acne, and provide great sources of omega 3’s and 6’s, and support the health of your heart.
Healthy Tip: Soluble fibers feed the healthy bacteria in your gut, and for best results leave the peel of your fruit intact.
1 Concorde (September-February) in season pear (de-seeded, and cubed)
2 bushels of kale (torn using your hands into bite-size pieces)
A handful of dried cranberries (topping)
3-4 Tablespoons Hemp Hearts (topping)
1/2 lemon (juices)
2 Tablespoons Extra Virgin Olive Oil
1. Wash and pat dry produce.
2. Using a serving size bowl, tear kale off of rib and add into bowl.
3. Slice, de-seed, and cube pear into smaller pieces and add to bowl.
4. Slice lemon, and squeeze its juices over the top of the salad. Add Extra Virgin Olive Oil, and massage the dressing ingredients into your salad.
5. Add toppings and Voila!
