Mediterranean Chard Black Berry Salad

Swiss chard (leaves and stems) can easily be incorporated into your meal planning. Leafy greens provide optimal macronutrients and calories to sustain a healthy regimen. Swiss chard yields vast amounts of minerals and nutrients, such as potassium, magnesium, and calcium. Alternatively, these leafy greens can be paired with your favorite spread of veggies and fruits! Not a moment too soon, as we are nearing the peak of berry season in Oregon, I decided to pair my leafy greens with blackberries, and it was exquisite! This recipe offers a healthy assortment of crisp and naturally sweet flavors that kick starts your digestive juices.

Healthy Tip: Buy produce locally and help support your local farms. Do a little research and find U-pick Berry Farms, Farmers Markets, and Food Co-ops before the season takes off!

Ingredients:

A bundle of fresh Red Chard
bundle of fresh raw Tuscan Kale
8oz Blackberries
Balsamic Glaze (Drizzle over the top)

Instructions:

  1. Wash all produce. Set black berries aside, while you prepare the remaining ingredients.
  2. Using your hands, tear the leafy greens into bite size pieces.
  3. Using a medium size bowl, add leafy greens with the black berries into bowl and mix.
  4. Lastly, drizzle balsamic glaze over the top (can mix together or keep as topping).
  5. Enjoy right away!
